asset: add coingecko_id to Metadata struct (#5007)

Extends the `Inner` struct in `denom_metadata.rs` to include a
`coingecko_id` field. Updates related methods to handle the new field,
including `From`, `TryFrom`, `Debug`, and default initialization.
