Consolidate build configuration/other stuff in pyproject.toml. Means a few things:

  • Most modern/up-to-date build specification
  • Drop some deprecated/no-longer-used setuptools configurations
  • Drop some unused dependencies (docs)
  • Clean up repo root a bit
