As part of the Mintlify doc revamp, this PR:

Moves old release notes to an archive section
Cleans up text of the top-level section landing pages
Swaps out old fuzzy screenshots for sharper Enterprise or CE images
Edits the Home page copy to match the Figma design
Renames the BloodHound GUI page to BloodHound Dashboard
Removes broken page anchors from the Mintlify migration
Adds a link to the BloodHound Legacy docs at the bottom

Motivation and Context

This PR addresses: #1085

Testing

Tested locally with Mintlify for broken links and broken site
