Modify release gha workflow to add coral_cli_ubuntu binary to the release assets

• Modify release GHA file to be able to only download coral-cli binary based on this https://github.com/orgs/community/discussions/6003, it does not seem possible to remove source code zip in assets release --> so it adds a coral_cli_ubuntu binary to the assets.
