Update README.md - Overhaul downloads

- attempt to make it more concise by leveraging shield.io 'GitHub release (by tag)'
- which resulted in removal of the download column since the versioning and number of downloads is provided by 'GitHub release (by tag)'
- re-added previous/older versions
- added # of downloads for previous version

 Note: The .img files for burning to USB flash drives support both bios/UEFI booting. The .iso image currently supports legacy bios booting only and not UEFI, however, a bios/UEFI version of the .iso is in development and will be released shortly.
