- 2 lb sweet potatoes or yams
- oil
Prick the sweet potatoes with a fork and rub with oil. Roast at 400 F until soft, 40 to 50 minutes.
- 1 can black beans, drained
- 1/3 C ketchup
- 1 T molasses
- 2 cloves garlic, minced
- 1 tsp chili powder
- dash cayenne pepper
Combine the sauce ingredients in a saucepan. Bring to a boil, then keep warm.
Slice sweet potatoes in half lengthwise; top with bean sauce.
Half a pound of sweet potato is about right for one person.
