Update livestock model or add cattle model

@camappel did some nice work fine tuning the livestock model with a bunch of cattle data and say big improvements. See:

I think it would be good to either update the livestock model or add a cattle model based on this work. There is an existing PR into the livestock model repo on huggingface (@camappel is that the final version from your EDS notebook?):

But wasn't sure if we just wanted to update livestock or add it as a separate cattle model since it's been heavily fine tuned on cattled.
