I think we first may need to evaluate whether Grobid is a viable/complete solution. The default deploy of Grobid (docker + GPU) is going to be expensive for some pretty sparse usage.

Grobid (especially with CRF model) might be fine without GPU. I doubt the user will be upset if we're not blazing fast.
