OS Suggestion For This Now that CentOS 8 is EOL? Thanks! Can Stream to used, or CentOS 7 is still in life, or RHEL?

Late to suggest, but you could try Alma or Rocky, as they provide downstream copies of RHEL 8 (and RHEL 9 now). Stream could be used as well, but then you get a build between Fedora and RHEL.
