Workflow fixes for static OpenAL (skullernet#103)

* workflows: Disable --fatal-meson-warnings for now * workflows: Explicitly disable alsa on Windows * workflows: Avoid --auto-features=enabled Subprojects with a lot of "auto" options (eg openal) easily break because suddenly options are "enabled" on all platforms that are simply not fit everywhere. Instead, explicitly enable the options we want. * workflows: Dump build settings w/ meson configure * workflows: Explicitly disable -Werror for openal-soft * workflows: Try openal-soft fallback on freebsd For skullernet#96
