When deleting all the ingredients of a product, the fruits-vegetables-nuts-estimate-from-ingredients_100g and fruits-vegetables-nuts-estimate-from-ingredients_serving are not reset.

As a consequence, it seems it's not possible to fix Nutrition value over 105 - Fruits vegetables nuts estimate from ingredients data quality error.
