Make it all automatic

For all field types, except Text, the values in stored, indexed and docValues are the same. If one is willing to pay the processing price, it should be possible to freely toggle these on and off. The end-vision is to build this into Solr, so that there will be an API where a new schema can be assigned to an existing collection and Solr will automatically upgrade the full index to that schema. Or fail early if they are not conversion-compatible.

This would be a whole new project, and there are no current plans for building it.
