Investigate Ark UI as a replacements for Radix and Downshift #12

Ark UI is overtaking Radix with the size of its component library. For example, Ark UI has a Combobox and TagsInput.

However, the biggest potential improvement could be bundle size. Radix and Downshift dependencies currently represent ~80% of our current bundle size. We should see how the bundle size changes when using Ark UI as an alternative.
