Great job overall.
I think it would be trivial to support an image in the default MentionListItem.
I'm up to do it myself, but I have to rewrite MentionList and MentionListItem just to achieve that.

Also, maybe it would be nice to just replace MentionListItem instead of the entire MentionList (nowaday possible using renderMentionList prop).
