Feature request: Change the colour of an event on click

I know you cound do that with fullcalendar, but I couldn't find a way to do that on streamlit.

You'd have to edit the event properties itself. You can get the event from the return value of the calendar (eventClick) and then implement your own logic to change textColor or whichever color you'd like.
