auth0-extension-express-tools dependency update

Due to the changes coming in February 2020 in how Google Chrome handles cookies, the Auth0 team has updated the auth0-extension-express-tools library to 2.0.0. Express.js dependency should also be updated to version 4.17.0 or higher to support the changes in auth0-extension-express-tools.

Thanks @lzychowski. Unfortunately, due to the lack of support from the Auth0 team developing external plugins I was never able to finish it. I'll archive or delete it.
