It would be great to be able to set the Chef version when using the Omnibus install (e.g. "bash install-chef.sh -v 11.6.2").

I just ran into an issue where the recently released 11.8.0 broke one of my cookbooks. Being able to use a specific Chef version rather than the latest and greatest would be very helpful.
