Improved work with statistics for Self-Hosted VPN

It would be convenient to have more tools to work with statistics for Self-Hosted VPN. For example, the ability to view server statistics (load, status, etc.) and overall traffic usage statistics (not per user individually as it is now). In addition, it is missing the ability to view traffic statistics for XRay protocol users (now it is available only for AmneziaWG users, as I understand it).

Hey! I'm not an Amnezia dev, but as of server load or general network usage - I think, you can use default Prometheus for this purpose.
