According to the bunyan docs, hostname is configurable:

hostname: Required. String. Provided or determined at Logger creation. You can specify your hostname at Logger creation or it will be retrieved via os.hostname().

At time of writing, it doesn't seem like hostname is configurable. I'd be happy to submit a PR if this feature is desirable.
