Openwrt might not be so good because AVM uses some closed-source drivers and/or patches the normal WLAN tools.
With Openwrt it is very important to set the country, the developers think that people who are too stupid to set this shouldn't use WLAN...
In any case, if you want to tweak the WLAN yourself, Openwrt is better.
With AVM the only thing you can do is edit the files in /var/flash/ , e.g. ar7.cfg or wlan.cfg. Use nvi for this, and it is best to reboot afterwards to make sure that the change has been accepted.

AVM does not publish all sources, some drivers (maybe wlan of you device, i dont know you have to check osp.avm.de) are not gpl etc. So Openwrt cant do it better or the same way.
Simple solution: if you want use openwrt, you should buy hardware which is fully open source. Additional its not so expensive ;-)

If or what you can change with Fritzos you have to search by yourself. use "ps" to see which processes are running, chekc their config files, check /var/flash/ etc

There is another discussion about SFC
Openwrt does most time NOT support for AVM devices POTS, ISDN, Dect because it is closed-source - but dsl + wlan may work.
But there are additional some "calibration" data for wlan, maybe openwrt missed it or did not know how to use
