[Bug]: v1.56.2+ raises a UserWarning: Valid config keys have changed in V2 on import #7576

What happened?

Starting with v1.56.2, LiteLLM raises a UserWarning on import litellm.

Relevant log output

/Users/laurent/.cache/uv/archive-v0/uECfyafDam1pc5hZV7n6u/lib/python3.10/site-packages/pydantic/_internal/_config.py:345: UserWarning: Valid config keys have changed in V2:
* 'fields' has been removed
  warnings.warn(message, UserWarning)
